"The most famous of China’s traditional tea ceremonies is the gongfu ceremony, with a name meaning “making tea with skill.” Originating in the 18th century, gongfu involves the elaborate preparation of oolong tea as a sign of respect for guests. The variety of tea selected—its physical characteristics (taste, fragrance, and shape of the leaves) and spiritual properties (the tea’s name, history, and origins)—is essential, and so is the purity of the water, which ensures superior taste while honoring nature. Following yin-yang precepts, teaware should be both practical and aesthetically pleasing. Essential equipment includes a porcelain teapot or a traditional Chinese teapot made from clay that is unique to the Yixing area of Jiangsu province, which was producing ceramics five to six thousand years ago. Included in tea ceremony equipment is a chahia or tea pitcher, a brewing tray along with a tea pick or teaspoon, a dark-colored tea towel, three small cups, and a tea strainer."
